tuesday

this morning i completed day one of week six of the couch to 5k running podcasts. it's 5 min warm up walk, 5 min run, 3 min walk, 8 min run, 3 min walk, 5 min run, and 5 min cool down walk. easier than running 20 minutes non-stop but i guess the point is to get used to the activity getting longer and longer.

for breakfast i made an oatmeal pumpkin pancake. it was pretty good but didn't hold together as a pancake.

i used:
1/2 cup oats (2.5 points)
1/2 cup pumpkin (0 points)
3/4 t vanilla
1/4 t baking powder
2 t splenda brown sugar
2 T egg whites (0.5 points i think)

yum yum. in this case i liked the pumpkin. i am going to the giller light awards tonight and out for dinner first so i am trying to eat low point for breakfast and lunch. sort of.

today's menu:
breakfast:
oatmeal pancake (3)
3/19

lunch:
chili (3)
6/19

and after lunch:
2 slices sprouted grains toast (2)
8/19

i also brought a yogurt and banana if i am ravenous.

Yeah I'd be ravenous.
Nice work on the running thing. Hopefully you didn't find it too easy, if so pick up the walking pace. How many weeks is it? Are you almost done?

Did you just make up that recipe? If so, how do you know when you need to put baking powder in something? smart.

it wasn't too easy - of course, i don't really enjoy doing it at 7am! i think it's 9 weeks... so sort of close to being done.

i didn't make it up. i found a recipe online although that recipe called for more egg white and less pumpkin. i wanted to use a whole 1/2 cup because it's 0 points... i think the recipe only called for 2 T of pumpkin. and i have no idea about the baking powder. the original recipe said put it in so i did. i wonder why. maybe it has to do with the pumpkin cooking?

oh and baking powder is a leavener... so that is what is helping "rise" or "puff up" your pancakes... same with baking soda, although they are not completely interchangable!

think difference between a crepe and a pancake... crepes have no leavener.
