dinnertime

ok, i'm armed and ready with a game plan for dinner.

i'm doing a different take on mrs. furious's salmon noodle casserole.

i love baked pasta, but i don't love salmon (hey, it smells funny to me, what can i say?) and i don't think my boyfriend likes tuna (which i will change... in time... but now is not the moment) so i am making turkey sausage noodle casserole.

first i will chop an onion and cut up 2 or 3 schneider's lean turkey grill 'ems, and fry with non-stick cooking spray for a bit.



then i will boil whole wheat rotini, add 1 cup frozen peas and 1/2 cup frozen corn... and then follow the rest of the recipe as is. and i will side it with green and yellow beans, and carrots. the end. i am most excited about the healthy request cream of mushroom soup.

Ughhh Healthy Request Cream of Mushroom... I thought that was going to be good until I bought it and made it. It was sooo nasty and stunk up my kitchen so much I wanted to hurl.

How did the dinner turn out? No more poutine?

ok i made it a little differently than i said:

i chopped up one small yellow onion, 3 turkey grill em sausages (8 oz.) worth, and 1/2 a red pepper.

i sprayed my pan with non-stick spray and let them cook for a bit.

i used this new pasta, "primo whole grain" or something (they have a pasta sauce brand) rotini, adding 1 cup peas and 3/4 cup corn (all frozen) at the appropriate time. but i don't think the pasta liked having frozen stuff added to it, and became a little mushy even though i didn't cook it for that long. it was probably the brand of pasta and i don't think i'll use it again. also we put in 6 oz of pasta instead of 4.

anyhoo, then i combined one can of healthy request cream of mushroom soup (which i didn't have a problem with... it didn't smell funny or anything [see comment above], 1/4 cup fat free mayo (i only have fat free and full fat, nothing in between. now that i think of it i could have used half of each...), 1 t mustard, and 2 T milk (2%).

then i added the meat, onion and red pepper mixture to the white liquid mixture in a casserole dish, then adding the pasta and peas/corn (after draining). baked for 35 minutes at 350°F.

i served with a small mix of green and yellow beans, and carrots (cooked using one of those glad steam bags).

my boyfriend and i each ate 1/4 of the meal, so 1/2 was leftover. it was yummy and colourful.

each serving has:
1/4 of an onion
3/4 of one turkey grill em sausage
1/8th red pepper (i think)
1/4 can soup
and the rest is pretty small.

later he said he was hungry... i wasn't. and i think he only said that because he wanted an excuse to eat rainbow licorice.

one question - the soup is one of those "don't add water" soups... is that what i'm supposed to be using - or should i be using an add water soup, but not adding the water... anyone?

haha, good idea! I asked DBF last night if he would eat a Tuna Casserole and he said no...I was sooo disappointed cuz I wanted to try Mrs. F's recipe too.

So now I shall steal your idea!

Ha! and then make the tuna or salmon version when he is out of town next month.
